Try this low FODMAP dip if you are experiencing symptoms of IBS. Use with vegetable sticks or crackers. Great for any party!
Ingredients:
· 500g carrots
· ½ teaspoon ground cumin
· 2 tablespoons garlic infused olive oil
· Sprinkle salt and pepper
Method:
1. Preheat oven to 200 degrees Celsius.
2. Cut the ends off your carrots and place in a baking tray with one cup of water.
3. Roast for 30 minutes or until cooked through.
4. Allow to cool.
5. Place the carrot in a food processor. Stop the processor a few times to scrape down the sides.
6. Add the olive oil, cumin, salt and black pepper. Blend until desired consistency is reached.
